Freeter Jamun Cake Recipe with Whipped Cream Frosting


Ingredients:

 

  • 3/4th cup or 100gms all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 cup full-fat yoghourt mixed with 1/4th tsp baking soda
  • 6 tbsp sugar
  • 1/4 cup flavourless vegetable oil
  • 1 tbsp freeze-dried jamun powder
  • 1 cup whipped cream
  • 2 tsp freeze-dried jamun powder

 

Instructions:

 

  1. Preheat your oven to 180°C/350°F. Grease a cake tin with vegetable oil or cooking spray.
  2. In a mixing bowl, whisk together the oil and sugar until combined and pale.
  3. Add in the full-fat yogurt and 1 tablespoon of freeze-dried jamun powder. Mix well to combine.
  4. Sift in the all-purpose flour and baking powder and mix until it comes together. Do not overmix.
  5. Pour the cake batter into the greased cake tin.
  6. Bake in the preheated oven for 20-25 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  7. Once done, remove the cake from the oven and let it cool completely on a wire rack.
  8. In the meantime, prepare the whipped cream frosting. In a mixing bowl, add the whipped cream and 2 teaspoons of Freeters freeze-dried jamun powder. Mix until well combined.
  9. Once the cake is cooled, spread the whipped cream frosting on top of the cake.
  10. Serve the cake and enjoy your delicious freeze-dried jamun cake.

 

Additional tips:

  1. Make sure that all the ingredients are at room temperature before you start making the cake batter. This helps to ensure that they blend together evenly.
  2. Do not overmix the batter, as this can cause the cake to become tough and dense. Mix just until the ingredients are combined.
  3. Grease the cake tin properly with butter or oil and then dust it with flour to ensure that the cake comes out easily without sticking to the tin.
  4. Don't open the oven door during baking as this can cause the cake to sink in the center.
  5. You can also add a pinch of cardamom powder or cinnamon powder to the batter to enhance the flavour of the cake.
  6. After the cake is baked, let it cool completely before frosting. This helps the frosting to set and prevents it from melting.
  7. For a more festive look, you can sprinkle some chopped nuts or dried fruit on top of the frosting.
  8. Serve the cake with a scoop of vanilla ice cream or a dollop of whipped cream for an extra special treat
